The Stripetti squash is medium-large in size and contains dense, thick flesh around a center cavity with seeds. When cooked, it's creamy and potato-like with a sweet, nutty flavor. It can be roasted or boiled, like other hardy squashes, or even broken up into strands to create squash "noodles."
