This lean piece of meat lives up to its name with its delectable tenderness. The tenderloin is a cut that quickly picks up whatever it's seasoned with—in this case, we've added rosemary, basil, and thyme for aromatic, herbaceous flavor. For a simple, satisfying meal, we recommend searing it in an oven-safe pan until browned all over, then finishing in the oven at 375 F until it reaches an internal temperature of 145 F, about 15 minutes.
