Squid with marinated chickpeas
Place chickpeas in a bowl. Add 3 tbsp of olive oil, 1 tbps fresh chopped oregano, 1 tbsp lemon juice, 1 tbsp lemon zest, 1 tbsp chopped parsley, half 1 minced garlic clove, and sea salt then mix well. Let marinate in the fridge for several hours. Remove from refrigerator an hour prior to serving and place in a serving bowl to allow to come to room temperature. Next, cut 1 pound squid tubes into rings. Place rings and legs on a towel to dry. Heat a large sauté pan over medium high heat, add a tbsp of olive oil to the pan. Add the squid and turn the heat up high. Season with a pinch of salt and sauté for a minute, stirring often. Squeeze on a little lemon juice, add remaining 1 tbsp parsley and place sautéed squid into the bowl with the marinated chickpeas.
