How to: Huli Huli BBQ Chicken
This grilled chicken recipe has a Hawaiian-style marinade with a teriyaki-esque flavor that even kids will love! Here's how to make it: Peel and finely grate a small thumb of ginger and 2 cloves garlic. In a large bowl, whisk together 1/2 c ketchup, 1/2 c soy sauce, 1/3 c packed brown sugar, 1/4 c pineapple juice, 3 tbsp rice vinegar, ginger, and garlic. Reserve 1/3 c of mixture and set aside. Add 3 lb chicken thighs, wings, or drumsticks to remaining marinade and toss to coat. Cover with plastic wrap and let chicken marinate in fridge at least 8 hours or up to overnight, turning once. When ready to cook, oil grates and heat the grill to medium. Grill chicken until cooked through, 5-7 minutes per side, basting with the reserved marinade as it cooks.
