Recipe: Beef yakisoba with veggies
These Japanese-style stir-fried noodles don't skimp on protein-packing beef and good-for-you veggies. What to do: Boil the noodles from 3 packages beef-flavored ramen according to package directions. In a bowl, toss 2 lb beef strips with 1/4 c oil and 1 ramen seasoning packet. In a large nonstick skillet or wok, heat 1/4 c sesame oil over medium-high heat. Working in 2 batches, stir-fry beef until no longer pink on surface, 1-2 minutes. Toss in 1 sliced onion, 2 tbsp minced ginger, and 1 tbsp minced garlic. Stir-fry until onion is tender, 1-2 minutes more. Toss in 16 oz coleslaw mix, 3 sliced bell peppers, and 1 c shredded carrots. Stir-fry another 2-3 minutes, then toss in cooked noodles, 1 c corn, 1/2 c stir-fry sauce, and the other 2 seasoning packets. Cook until sauce is mostly absorbed and beef reaches internal temperature of 165 F. Garnish with 1/2 c sliced scallions. Serves 4. Brought to you by Beef Checkoff.
