Our San Cristóbal de las Casas & Yajalón Single-Origin Decaf is an exceptional medium-roast, fully washed, decaf coffee. This coffee is grown by smallholder producers, delivered to the San Cristóbal de las Casas and Yajalón mills in Northern Chiapas. Working closely with local communities, InterAmerican verifies it to ensure economic transparency. This coffee comes from the Chiapas region of Mexico, which produces large beans that create a balanced cup with a smooth body and ideal medium sweet acidity. As you sip this coffee, notice the notes of lavender, waffle cone, and creamy pecans. These Bourbon, Caturra, Typica, and Catuai varietals grow in a volcanic, loamy soil. Unlike other decaf processes which use chemicals, Mountain Water Process (MWP) is an entirely natural process that extracts the compound responsible for caffeine alone while preserving the multitude of other compounds responsible for flavor.
