Tarragon is one of the sweetest herbs we know. With a delicate, licorice-like flavor, tarragon adds a mellow brightness to salad dressings and chicken or fish dishes. To unlock tarragon's flavor, crush the dried leaves before adding it. For a wonderful dip for crudités or steamed shrimp, stir dried tarragon into equal parts mayonnaise and sour cream, with a pinch of salt and freshly squeezed lemon juice.
