Pika and Luc make quiches, potpies and appetizers in the Hudson Valley and the people in NYC enjoyed them for years as Fresh Direct customers. We were asked to develop a tasty Vegan pumpkin pie for the holidays in a vegan crust that achieved the flakiness of our all butter crust. Using a clean label vegetable shortening we managed to do just that. Finding the right coconut milk to substitute the sweet condensed milk in non-vegan pumpkin pies was the next challenge. I don't like the taste of coconut, definitely not in a pumpkin pie. The right coconut milk combined with the right mix of pumpkin spice turned out well. No coconut flavor to be detected.
