As delicious as sturgeon caviar, with a milder flavor. The tender, firm beads burst when you bite them. Salmon roe has a buttery but not oily consistency and a flavor that hints at salted, preserved salmon. Its lower cost makes this an excellent everyday caviar. We like to use this wherever caviar would go — in blinis, on top of potatoes, or as a gorgeous glow-in-the-dark garnish for cocktail appetizers. (from Caviar Russe)
