The king salmon fishing season lasts only a few short months, while it's summer in the southern hemisphere. But up here, it's the perfect time to get your oven roaring at high heat to quickly roast these thick fillets. Please note: Due to this salmon's delicate flesh, we do NOT scale the fish or remove the pin bones. We recommend removing the pin bones after cooking.
