African eggplants are small to medium in size with crunchy, firm flesh and pale skin that ranges from white to green to reddish. Like other eggplant varieties, they have a bitter flavor that deepens as the fruit ripens. They're commonly used in curries and stews, and also hold up well when roasted, fried, or sautéed.
