This meatless twist on chicken salad swaps out the poultry for protein-packing chickpeas. They're smashed into a creamy-yet-chunky consistency, then folded into a crunchy mix of fennel, celery, and fresh herbs. For a low-effort lunch, try scooping the salad onto some mixed greens or inside a sandwich (we love it in a pita). It's also excellent on top of crackers for a quick snack.
