Similar to chuck in flavor, but with a leaner texture, top round steaks are a great option for quick pan-searing or broiling. Because it's so lean, we recommend marinating this for a short period of time with with something slightly acidic, like citrus, vinegar, or even a splash of Coke, to help tenderize the meat. For a southwestern twist, marinate in citrus juices and ancho chile powder, then grill, slice thin, and serve in corn tortillas with green salsa.
