Baja bay scallops have a sweet taste with a hint of the sea and a firm, velvety texture. They're our go-to scallop because you can simply give them a quick sauté before adding them salads, pastas, and many other recipes. Since they are bite-sized and delicate in flavor, we recommend using them in simple dishes where they won't get overpowered. These scallops are sustainably hand harvested by divers on Mexico's Baja peninsula before being flash frozen the same day.
