Patak's Curry Paste, Madras

Madras was the name of a city in southeastern India that changed its name to "Chennai" after Indian independence in 1947. The city has since been renamed, but the name of the dish has stuck. Madras Paste is robust, hot, and spicy, with flavors of cumin and chiles. (from Patak's)
