Haven's Kitchen Barbecue Salmon

This recipe from our friends at Haven's Kitchen features their tangy barbecue sauce, which brightens up the rich flavor of roasted salmon: Preheat the oven to 275 F. Let a 2 lb. skinless salmon fillet rest at room temperature for 20 minutes. Pour a glug of olive oil into a baking dish to coat. Place salmon fillet inside the dish and rub all over with half a pouch of Haven's Kitchen Tangy BBQ Sauce. Drizzle with more olive oil. Roast salmon in oven until a knife easily cuts through the middle, 35-40 minutes. About 10 minutes before salmon is done, in a large bowl toss 3 diced avocados, 1 pint cherry tomatoes cut into quarters, 1 chopped small red onion, a handful of chopped cilantro, 1-2 minced jalapeños (to taste), juice of 2 limes, and 1/2 tsp salt. Drizzle more BBQ sauce over salmon and top with salsa before serving.
