How To Make Veal Bacon Burgers

Our locally-sourced veal is surprisingly versatile and easy to work with. You can even use it to make a tasty burger that'll blow away your expectations. Give it a try in this recipe from our friends at Beef Checkoff: it adds bacon and potato chips for extra flavor and a one-of-a kind texture. Here's how it's done: In a small bowl, mix 1/2 c mayo, 1 1/2 tbsp sun-dried tomato paste or puree, 1 tablespoon basil pesto, and 1/2 tbsp Dijon mustard; set aside. In a large bowl, mix 1 lb ground veal, 4 slices chopped crispy bacon, 2/3 c crushed sour cream & onion potato chips, 1 lightly-beaten egg, and 1 tsp minced garlic until just combined evenly. Shape mixture into four 3/4-inch-thick patties. Heat a grill for medium heat, then arrange patties on grates. Cook, uncovered and flipping as needed, until you reach medium doneness and internal temperature is 160 F, 10-12 minutes. Layer lettuce and sliced tomato onto the bottoms of four split buns. Place a patty on each, then spread a little bit of pesto mayo onto each. Add the bun tops and serve.
