Inspired by the holiday season, this clothbound cheese is open-air aged for 13+ months before its final aging with red wine and blackberry honey-delivering flavors of nut and caramel with sweet, floral tones. Serving suggestions: Slice into triangles to create a festive holiday cheese platter heaped with clusters of fresh grapes and ribbons of salty prosciutto. Affinage: This firm, natural rind, pasteurized cow's milk cheese is first rubbed with butter and then aged at 47f and 85% humidity. Each truckle is carefully attended, consistently brushed and hand-turned throughout its 13+ months of aging. This traditional method results in a 14-16% moisture loss during aging, allowing for a slightly lower moisture and higher salt content, creating a rich taste and texture with a clean, creamy finish.
