Affinage: This firm, natural rind, pasteurized cow's milk cheese is first rubbed with butter and then aged at 47f and 85% humidity. Each truckle is carefully attended, consistently brushed and hand-turned throughout its 13+ months of aging. This traditional method results in a 14-16% moisture loss during aging, allowing for a slightly lower moisture and higher salt content, creating a rich taste and texture with a clean, creamy finish.
