Fresh sage's grayish-green leaves pack a robust earthy bouquet, a little like mint but pleasingly musty and deep. We use it in hearty dishes like sausages, stuffings, roasts, and stews. Added to melted butter, it makes a great sauce for ravioli. Wrap fresh sage loosely in a paper towel, tuck inside a plastic bag, and store in the refrigerator for up to four days.
