How to grill whole fish
There's nothing better than grilling whole fish. The skin keeps the meat from drying out, while the bones keep it juicy. Start by stuffing the cavity with several sprigs of herbs and a slice or two of citrus. Lightly rub with olive oil, then season with salt and pepper. Clean and lightly oil a grill; heat to medium. Cook 4-6 minutes per side - it's ready to flip when the skin no longer sticks. When done, the flesh should easily slide from the bones and the skin crispy. Dress with lemon and your best olive oil and enjoy. This method also works with fish steaks or fillets.
