Lupini beans, also referred to as choco, tarwi, and lupin, are a staple in pantries across the Mediterranean, Middle East, North Africa, and Latin America. They add high amounts of nitrogen to the soil they grow in and require little water, making them a resilient rotational crop in the regenerative organic ecosystem. We rotate our heirloom lupini beans with other regenerative organic crops like amaranth, quinoa, and chia.
