This fresh burrata is made for us in the Bronx by Neapolitan artisan Franco Spatola, who has been dubbed the "godfather of cheese." Spatola uses an old family recipe to make an exceptional product with a smooth, mild taste. Each piece contains fior di latte mozzarella wrapped around stracciatella - a decadent mix of cream and shredded cheese. It's perfect served simply with a bit of olive oil and salt, or you can eat it on toast, in salads, sandwiches, or with some prosciutto or fresh tomatoes.
