Escarole's broad, slightly bitter outer leaves have the taste and crunch to stand up to sweet, tangy salad dressings. The pale inner leaves are great in any salad that calls for a warm dressing. The meaty outer leaves have fuller flavor. They're good for salads and excellent as soup greens, particularly in minestrone. Established in 1818, Hepworth Farms is one of the premier organic growers in the Hudson Valley. Under the direction of sisters Amy and Gail Hepworth, this FreshDirect Partner Farm serves as a leader and inspiration for responsible and sustainable agriculture. Hepworth Farms preserves and maintains approximately 550 acres of biodiverse and nutrient-dense soil in Milton, New York, just 1.5 hours north of New York City. During their peak growing months from May through late November, they provide a full assortment of vegetables including tomatoes, beans, Brussels sprouts, cabbage, cucumber, eggplant, peppers, zucchini, lettuces, greens, roots, and squashes.
