Raised humanely with pasture access on small family farms in Pennsylvania, these heritage-breed birds are never given hormones, antibiotics, or animal byproducts. Marc, the owner of Snowdance Farm, worked closely with Cornell University researchers to develop a breed of chicken optimized for taste and healthy growth in climates like the northeast. These birds have access to the outdoors at all times. In the summer, they choose to be on grass, but in the winter, they naturally gravitate indoors to avoid the weather and better access their food. These heritage-breed birds have smaller breasts and larger legs, so we recommend brining or marinating the birds prior to roasting so you get fully cooked dark meat, while keeping the white meat moist and tender. Snowdance Farm is a family farm nestled in Livingston Manor, in the southern end of New York's Catskill Mountains. Founded in 2002, it began first with poultry, and over time expanded to turkey, sheep, heritage pigs, and Angus beef, while also incorporating and partnering with like-minded family farms. Today, Snowdance works with retailers and restaurants in and around New York City to expand access to pastured meat and poultry raised without antibiotics.
