Founders Brian Polen and Brandon Doughan met at a mutual friend's wedding in Japan; after touring a small mountaintop brewery producing handcrafted sake, they decided to start a brewery in Brooklyn, NY. Their sakes are all Junmai-style and brewed using only four ingredients (rice, water, yeast and koji); rice is grown and polished in California/Arkansas and the water is NY's finest. Aromatic, fruit forward and clean, with notes of white flowers, ripe apple, and tropical fruit. Pair with sushi or raw scallops. (from the vintner)
