Here's how it's done: Cook 1 bag tortellini according to package instructions; save a little of the cooking water before draining. In the empty pot toss tortellini with a few tablespoons pesto, olive oil, a handful of toasted pine nuts, small pieces of mozzarella cheese, and a few halved cherry tomatoes or sun-dried tomatoes. Divide between bowls and garnish with thinly-sliced basil, a drizzle of olive oil, flaky sea salt, red pepper flakes, and ground black pepper.
