Wild cranberries: a special fall treat
Tama Matsuoka Wong forages from her land in in New Jersey to collect wild edible treasures for us. We're thrilled to offer her finds throughout the year, but fall is extra special because of her cranberries, which are indigenous to the region. Using careful, labor-intensive methods that help maintain the area¿s biodiversity, Tama and her partners harvest berries that are smaller and less uniform than those from commercial farms. However, the taste is more complex and less bitter. They're excellent for fall feasts and baking, along with all of the wild gems from her company Meadows & More.
Build the perfect winter cheese board
The key to a winning cheese board is the right combo of components. This time of year, you can wow your guests with exclusive seasonal offerings like Chocolate Blue Cheese or Gruyère d'Alpage! First, start with texture and aim for a mix of firm, semi-firm, and soft cheeses. Try a blend of cow, sheep, and goat milk cheeses. Then, start to pair. Charcuterie, seasonal fruit, nuts, and preserves all help balance the full fat of the cheese and elevate the flavors. For some crunch, add locally-made crackers and breads. Tip: 2-3 ounces of cheese per person is just about right!
Locally grown squash
Don't let pumpkin get all the love. It's squash season too, ya know. We're talkin' butternut, acorn, delicata and more. Don't let these oddly-shaped veggies squash your dreams - they're super simple to cook up. Pretty much every variety is perfect to roast plain with a lil' S&P, or you can roast and puree them into a squash soup, or add to a hearty fall salad.
